Cole Slaw | great for pork pairing

Around here we love nothing more than a freshly smoked boston butt. One of the first things we love to make is pork soft tacos. But these highly requested soft tacos require a good pork slaw to top them off with. There are many different recipes for cole slaw out there but take a little from this recipe and a little from that recipe I developed a cole slaw that the entire family loved. Lets get started:


Ingredients

1 medium head of green cabbage, shredded

1 quarter of a medium head of purple cabbage (optional)

1.5 cups of shredded carrots

1/2 cup of chopped celery (1/4 teaspoon of celery seeds can be substituted)

1 1/4 cup mayonnaise

1/3 cup sugar

1/4 cup of apple cider vinegar

1/4 tablespoon of salt


Preparation

Combine all ingredients in a bowl. Mix together well. Cover and refrigerate. Remove when ready to serve.


This pork slaw can be served as a side dish as well to any type of pulled or chopped pork.
