Pineapple Garlic Barbecue Grilled Chicken


This recipe is a product of uncertainty. Not sure how to fix our chicken tonight, and tired of all the same options, we decided to go through the cabinets and refrigerator and throw something together. We found a can of pineapple in the cabinet, a jar of garlic and barbecue sauce in the refrigerator and of course the salt on the table. I have to say, this recipe turned out delicious and one that will be used a lot more often! Give it a try, I am pretty sure you will LOVE it!




Ingredients

3 - large chicken breast butterflied (you could use chicken wings with this recipe too)

1 tablespoon of garlic

1 16oz can of sliced pineapple (

1/2 cup of Sweet Baby Rays Barbecue Sauce


Preparations and Cooking Instructions

In a bowl drain the juice from the can of pineapple, and set the pineapple slices to side. Add the garlic, salt and barbecue sauce to pineapple juice. Whisk together all ingredients together. Place butterflied chicken breast in a deep dish, and pour mixture over and let marinate about 20 minutes (about the time it takes the grill to get hot.)


Start grill and let it be getting hot.


Place chicken on grill and brush (or spoon) the left over mixture onto each side of the chicken until the chicken is fully cooked. About 5 minutes before chicken is finished, place pineapple slices on grill with chicken, to get a nice grill mark and flip to grill other side. Remove chicken and place on platter, then remove the pineapple and place on top of the chicken breast.
