Homemade Chicken Salad

Out of all the dishes I have made for my husband, he gets the most excited over my chicken salad. Wether I cook chicken just for the salad or use the leftover chicken from a meal, he can't wait to make his lunch or "snack."


Baked, boiled, fried it doesn't matter how your chicken is cooked from the start, as long as its cooked done. I have made this same recipe using left over smoked turkey from thanksgiving, and let me tell you, it was just as delicious.


What you will need:

  • 2 cooked chicken breast or the equivalent to 2-3 cups (white meat or dark meat, your choice)

  • 1 small chopped onion (optional)

  • 1/2 cup of sweet relish

  • 1 cup of parmesan cheese (finely shredded)

  • 2 tbs. of mustard

  • 1 cup of mayonnaise

  • 1 tsp. of salt


Other items needed:

  • a large bowl

  • measuring utensils (in cups and spoons)

  • chopper

  • large table spoon

  • storage container


Let's get started:

Step 1: Chop cooked chicken to a fine texture and place in large bowl (if you don't have a chopper you can shred your chicken into fine shreds.)


Step 2: Add chopped onion, sweet relish, parmesan cheese, mustard, mayonnaise and salt into the same bowl.

Step 3: Stir all ingredients together and place in storage container.


Step 4: Although you can start eating the tasty chicken salad, it taste even better if you refrigerate for about 4 hours so flavors with combine for an even more flavor.

This salad taste great on a variety of items such as a garden salad, bread, crackers, pita bread or even tortillas. When we used the left over turkey from thanksgiving one year, we added cranberry sauce to our sandwiches and just WOW the flavors!
